I picked this book up at the library since Scott and I have been obsessed with Thai lately. We're having a thai night for dinner and I snapped this little shot before starting my "Spiced Tofu and Red Pepper" dish!

I love cooking, I have a collection of cookbooks that has a life of it's own and I am constantly on the lookout for that elusive recipe that makes "THE BEST" of whatever it is that I'm craving. I love the freshness, I love knowing what's in my food. I just love food.

This cook book stand covers part of the machining and finishing element of the course. It provides for use of the band saw, jig saw, pillar drill, cordless screwdriver, sanding disc and router.

The rear support of the stand may be removed, so that the unit will take up less space when stored.

The project will be submitted to SQA for 'prior-verification'.

A fast bean salad:

2 cups cooked black beans
1 1/2 cups corn
pint of cherry or grape tomatoes, quartered
juice of one lime
a little olive oil
handful fresh oregano, chopped
chipotle powder to taste
garlic salt to taste (I use the sea salt / dried garlic grinders)

...combine everything and let it sit for a couple of hours in the fridge; I served mine over warm rice with avocados.

Heat olive oil in a pan. Fry 2 small yellow peppers,a piece of celery,1 kohlrabi and a bit of ginger, all cut in small pieces. Add the previously cooked black eye beans. Season with salt,pepper, curcuma, cumin, mustard greens, fenugreek and fennel seed.
Enjoy with yoghurt!

The finished product. I almost didn't get any smoke ring this time around, but it was very tender. It's possible the wood I used did not "stain" the meat much - it's a wood I've never used on beef before. Still, I consider it a failure. I may never reach smoke ring nirvana.

I've never been satisfied with the smoke ring or tenderness of the briskets I've cooked in the past. I've asked some with experience as to what I can do to improve the process, and it came down to lower and longer cooking times. The process is nearly universal - smoke at 200-225 degrees for 12-14 hours, wrapping the brisket half way through.

Since wrapping is basically just baking the food in the smoker, I decided to finish the brisket in the oven. But because the brisket would be protected, I decided to try splitting the cooking process - smoking the brisket the night before, wrapping it for baking, storing it in the fridge till the next day.

3-hour "smoked" brisket: dry rub the night before, then smoked in a wok with some wood chips and smoked tea for about 30 minutes. then finished in a toaster oven at 200F for about 2.5 hours. not as good as the real stuff but not bad for a weeknight!

Our tour guide told us that we would skip breakfast so that we could take a morning hike instead. Then, a couple hours into our hike, they surprised us by leading us to a place where the crew had set up a dining table and cooking facilities in the middle of the bush. They served us pancakes and made-to-order omelettes.

Almond & Walnut Shrimp

- Toasted walnuts (1/2 cup)
- Sugar (1/8 cup)
- Splenda (1/8 cup)
- Salt (1/2 tsp)
- Paprika (2 tsp)
- Chili Powder (1 tsp)

Mix sugar, Splenda, salt & spices together.

Heat mixture in skillet until sugar dissolves (2-3 minutes)

Stir for additional 30 seconds to caramelize sugar.

Add walnuts and quickly coat with sugar mixture

Take out and place on parchment paper (so they won't clump together)

Break individual nuts apart and let cool.



- Jumbo or Collosal shrimp (1 to 1 1/2 cup)
- Almond flour (1/2 cup)
- Whole egg
- Egg whites (1/2 cup)
- Salt
- Pepper (black)
- Olive oil (1/2 cup)

Peel & devein shrimp.

Whisk egg and egg whites together until frothy

Coat shrimp with egg mixture, then dip in almond flour.

Heat skillet on high heat, add 1/2 cup olive oil

When skillet is at high heat & oil is just beginning to smoke, place shrimp in skillet for approximately 5 minutes, turning once half way.



- Mayonnaise (2 Tbsp)
- Milk 2% (2 Tbsp)
- Splenda (1 Tbsp)

Whisk together, spoon on top of shrimp.

i made this. i wanted to have jumbo shrimp but couldnt find any fresh ones anywhere, so i got frozen "colassal" shrimp from trader joes and after cooking them, they shrank so small to the size of cocktail shrimp! geez!

shrimp, oregano, salt, pepper, olive oil

for chimichurri sauce: garlic, fresh parsley leaves, oregano, red wine vinegar, extra virgin olive oil, lemon juice, salt and pepper
