I'm attempting to develop a variation on poutine that I'm calling "Poutine Ameliore". The goal is to have a finger-food appetizer for our holiday office party. The office has no oven access, only microwaves. Yechh!

So, instead of a layer of french fries covered with cheese curds and gravy (the classic poutine), I'm aiming for something like a potato chip wih melted cheese and a dollop of sauce/gravy.

Here I'm using my plastic 1980's-era KTEL mandoline knock-off to make thin slices of potato. I wanted to place them in a mini-muffin tray to make a cup to hold the cheese and sauce. Unfortunately the potatos don't bend like that, but you can fold/bend then and secure them with a toothpick to make a cone. I placed the cones in the muffin tins to help hold their shape.

Started baking at 400 degrees F and checked every 5 minutes.

Here the potato cones have come out of the 400 degree F oven: 20 minutes for thr group on the left, 15 minutes for those on the right.

Later batches were tried with and without salt, and on a baking sheet.

Finally decided to keep baking them in the muffin tins and added a little salt.

Make several dozen.
